Hello darlings,

today I am sharing my recipe for a very healthy and fulfilling meal that both me and Nick love. It's very easy to prepare and cook and can be served both for lunch or dinner.


For 3-4 servings you'll need:
300g orzo
1 fresh tomato
1-2 carots
2 eggplants
200g tomato sauce
fresh pepper

Optional:
fresh peppermint
yogurt (vegan or regular)
2-3 tablespoons of olive oil

NOTE: Me and Nick don't use any extra salt in our food and we are used to the natural flavors of the ingredients. However if you are not you need to add salt for this meal to be a success. The same goes with cooked olive oil. We prefer adding it after the end of cooking so that it doesn't loose any value by being heated.

Cut your eggplants into small pieces.



Do the same with the tomato and carrots.



 Place the eggplants, tomato and carrots into a pan and add the tomato sauce. Cook for 15-20 minutes in medium heat.



Once the vegetables are soft add the orzo and approximately 2 glasses of water. You need to stir regularly from this point on in order to avoid it sticking to the bottom of the pan. Add some fresh pepper (if you are going to use salt now is the time to add it).


Cook for 11-12 minutes or for as long as you feel the orzo is cooked. Serve with yogurt (or vegan yogurt) and add some peppermint leaves as well.
